Ashoka halwa is most famous in Tanjore and Mannargudi as well as thiruvaiyaru. Here all of the sweat stalls famous and easily get this halwa. In this areas marriage and all special functions are making ashoka halwa sweat. This sweat taste like almond halwa and also don't take more time for making. Let's start !!!

Ingredients :
Moong dhal - 1/2 cup
Brown sugar - 3/4 cup
Ghee - 1/2 cup
Wheat - 2 tbsp
Cashewnuts - 10 nos
Food color (kesari powder) - 1/4 tsp
Cardamom powder - 1/2 tsp
Procedure :
First washed the moong dhal for 2 or 3 times.
After washed moong dhal put into cooker and pour 2 glass of water (400 ml) close the lid then cooking with low flame. After 15 minutes will check it.
Pressure cook it for 5 whistles and after switch off the stove.
When the pressure is released from the cooker, open it and mash the cooked dal using with a ladle.
Suppose moong dhal didn't cooked like this consistency means then after cool down the cooked dal put into the mixi and grind it for fine paste. After mashed well transfer to the another vessel and keep it aside.
Take heavy bottom pan and put into 1 tbsp ghee in a pan. Roast cashewnuts until golden brown color and filter the nuts from ghee. Keep it aside.
In same pan add into 2 tbsp ghee and add wheat flour stir well until raw smell out. Don't make over roasted.
Once wheat flour get roasted add to the mashed moong dhal. Stir continuously without lumps.
Add 1 tbsp ghee. It is easily to stir.
Add Kesari powder and combine well until its blend together. Food color is optional
It will become little watery. Add with remaining ghee and stir without lumps.
In this time add roasted cashewnuts, otherwise the cashewnut will not join the halwa and stir well.
Stir continuously until it starts to release ghee on the edges. Cook it until halwa becomes glossy and the halwa come together without sticking to the pan.
If touch halwa with your hands it must becomes without sticking to your hands it is correct consistency for ashoka halwa.
Now add cardamom powder and stir it.
Once ghee is released immediately switch off the stove. At the same time trasfer halwa to another vessel. Now ready the ashoka halwa its taste is heavenly.
Notes :
1. Lets serve it hot or cold. Little heat the halwa before serving is delicious taste.
2. Moong dhal cooked and mashed well or else the halwa won't come smooth.
3. You can add any food color or you can just skip adding the food color. Instead of food color add turmeric powder it is best for healthy one.
